Breakfast: A healthy start to the day

Waking up with enough time to make a healthy breakfast can be a daunting task. Truthfully, just waking up on time can be a struggle in it of itself. However, skipping breakfast is not the best option. Though it can be argued, is it really the most important meal of the day? It is important to give your body proper fuel to get the day moving.

Overnight breakfasts have really changed the game for me. Don’t get me wrong, I love waking up and making a nice breakfast, but the reality of having the time for that is kind of limited to the weekends. Being able to meal prep breakfast is more helpful than one may realize. The first meal prepped breakfast I tried was an egg bake. This breakfast was delicious! But, it was not exactly the fastest as it required time to cut it, microwave, and put into a container.

Something I recently discovered that is super easy AND super convenient is chia pudding. It requires 3 ingredients and a container. I make prepare it the night before, put it in the fridge and it is ready in the morning! I like it to top it with berries or granola. It is a quick, easy, satisfying breakfast to grab when running out the door!

Recipe:

2 tablespoons chia seeds

1/2 cup milk (I use coconut milk, but any dairy free milk is good!)

1 teaspoon honey
